We have been using the Ketocal pancake recipe and calculating the already made pancakes into snack portions (Katie gets 100 calorie snacks). We usually make the pancakes in bulk at the start of the week so we can have about a dozen in the fridge that we can microwave for meals or snacks during the week. This snack was created because Katie wanted a chocolate bunny rabbit for Easter. We made the frosting out of heavy whipping cream and a little bit of sugar free chocolate jello.
